What to expect
Camilla will walk you through the traditional pesto-making process, showing how to build flavour using the mortar and pestle rather than a blender. You'll work with basil, garlic, pine nuts, cheese and olive oil, learning the timing and pressure needed to release oils without crushing ingredients. After you've finished, sit down to eat. First comes Genoese focaccia, then your pesto coating fresh pasta—either trofie or gnocchi made the Ligurian way. Tiramisu follows, with Ligurian wine and local digestifs throughout. The whole experience happens in a garden surrounded by greenery.
