What to expect
You'll start with a briefing on truffle ecology and the dogs' role in locating them, then fan out into the woods following the handlers. Expect plenty of walking over uneven ground as you watch the dogs work—when they alert, you'll kneel down and carefully excavate using small tools, uncovering the dark nuggets buried beneath roots and leaf litter. Once the hunt winds down, you'll settle at a rustic spot for an unhurried tasting. Fresh truffles are shaved over warm bread, pasta or cheese, their earthiness paired thoughtfully with local wine.

Wear sturdy closed shoes and clothes you don't mind getting dirty. The terrain is hilly with roots and stones; moderate fitness is essential.
